Buttermilk Pancakes

Did you make your own butter using my recipe in the Backyard Homesteader eCourse or recipe cards? At the end of the process you have liquid and solid, right? The solid is your butter, and the liquid is buttermilk my friends, so save it! My favorite use for buttermilk is of course, buttermilk pancakes. Don't waste your money on store-bought pancake mixes! I'm going to share my recipe below, which is super easy and super cheap.

Homemade Pancake Mix

4 cups all purpose flour

1/4 cup raw sugar

4 tsp baking powder

2 tsp baking soda

Whisk together ingredients in a large bowl and store in an airtight container until use.

To make pancakes:

Mix equal amounts of mix and buttermilk in a large bowl.

Add 1 egg and 1 tsp vanilla extract and whisk together.

I like to add extras like flax seeds, chia seeds, oats, or fresh fruit! Cook as usual in a buttered or oiled pan until both sides are golden brown. Top with your homemade butter and local maple syrup!
